Suntory Toki

Suntory Toki is a blended Japanese whisky that represents a contemporary approach to the country's storied distilling heritage. Designed with versatility in mind, it is widely celebrated for its role in the Japanese highball, a drink that has become a staple of modern social drinking culture.

Company History

The story of Suntory began with Shinjirō Torii, who opened his store, Torii Shōten, in Osaka on February 1, 1899, to sell imported wines. Over the following century, the company evolved into a global powerhouse. In 1923, the company established the Yamazaki Distillery, the birthplace of Japanese whisky. In 1963, the company officially changed its name to Suntory, a name derived from the English word "sun" and the anglicized version of Torii's name. Today, the Suntory Group operates globally with approximately 40,000 employees, managing a diverse portfolio that includes iconic brands like Yamazaki, Hakushu, and Hibiki.

Product History

Suntory Toki, which means "time" in Japanese, was created by the company's fourth Chief Blender, Shinji Fukuyo. Unlike traditional Suntory blends that often prioritize Yamazaki malts, Toki was crafted to "rethink the hierarchy" of components. It is a blend of whiskies from three distinct sites: the Hakushu Distillery, which provides freshness and aromatic lift; the Yamazaki Distillery, which adds depth and complexity; and the Chita Distillery, which contributes a smooth, balanced grain whisky. Released at 43% ABV, Toki was specifically designed to shine when mixed, particularly in the highball format.

Review

Suntory Toki is generally regarded as an approachable and versatile whisky, particularly favored for mixing. Based on independent reviews from sources such as Distiller, Master of Malt, and The Whisky Wash, the spirit holds an average rating of approximately 7.8 out of 10. Critics often highlight its light, crisp profile and its exceptional performance in highball cocktails.

Serving Guide

Glassware: Tall highball glass | Serving temperature: Chilled | ABV: 43%

Serving Suggestions

  • The classic Japanese highball: Fill a tall glass with ice, stir to frost the glass, add 30-45ml of Toki, top with soda water, and stir once gently.
  • Garnish with a thin slice of lemon or a sprig of fresh mint to highlight the whisky's bright, citrusy notes.
  • Serve alongside light appetizers or Japanese cuisine to complement its balanced, clean profile.

Cocktail Recipe

The Toki Highball is a refreshing, crisp drink that emphasizes the whisky's delicate aromatics.

Yield: 1 serving

  • 45ml Suntory Toki
  • 135ml Chilled soda water
  • Ice cubes
  • Lemon peel or slice (optional)
  1. Fill a tall highball glass to the brim with high-quality ice.
  2. Pour the Suntory Toki over the ice and stir briefly to chill the spirit.
  3. Slowly pour the chilled soda water into the glass, aiming to preserve the carbonation.
  4. Give the drink one gentle, vertical stir with a bar spoon.
  5. Garnish with a lemon slice if desired.
