Niki Nakayama

Niki Nakayama is a visionary Japanese-American chef and the owner of the acclaimed Los Angeles restaurant n/naka. Background

Born in Los Angeles in 1975, Niki Nakayama began her culinary journey with a deep curiosity about her heritage. She spent three years honing her skills at the Shirakawa-Ya Ryokan, a traditional inn owned by her cousins, where she studied under chef Masa Sato. Nakayama’s signature contribution to the culinary world is her ability to bridge Japanese tradition with local Californian ingredients. A standout element of her craft is her commitment to the Japanese concept of omotenashi, or selfless hospitality, which involves meticulously tracking diner preferences to ensure a personalized experience. One of her most famous dishes is a signature spaghetti served with abalone, pickled cod roe, and black truffle, a dish that has remained a staple on her menu.

Nakayama’s approach is rooted in the belief that the ingredients and the cooking process are more important than the chef. She strives to create a dining experience that engages all the senses while respecting the origin of her raw materials. By sourcing approximately 70 percent of her ingredients locally, she emphasizes sustainability and a strong sense of place. She views her work as a way to cross cultures, using Japanese techniques to elevate non-Japanese ingredients.

Recognition

Nakayama has received significant international acclaim for her work. In 2014, she was honored with the StarChefs Rising Star Chef Award. Her restaurant, n/naka, was named one of the 30 best restaurants in the world by Food & Wine in 2019 and has been awarded Michelin stars. Her story and culinary process were also featured in the first season of the Netflix series Chef's Table, which brought her unique perspective on kaiseki to a global audience.
