Instructions
- In a large bowl, combine the masa harina and salt. Gradually add the warm water, mixing by hand until the dough is soft and does not stick to your fingers.
- Cover the dough with a damp cloth and let it rest for 30 minutes to hydrate the corn flour.
- Divide the dough into small, equal-sized balls, approximately 30 grams each.
- Using a tortilla press lined with plastic, flatten each ball into a thin, uniform circle.
- Heat a cast-iron skillet or comal over medium-high heat. Cook each tortilla for about 60–90 seconds per side until lightly charred and cooked through.
- Keep the cooked tortillas warm in a clean kitchen towel.
- Assemble the tacos by placing a portion of your chosen filling onto each tortilla, topping with diced onion, fresh cilantro, and a drizzle of salsa verde.
Notes
For the best results, use high-quality, non-GMO heirloom corn masa. Serve immediately while the tortillas are warm and pliable. These tacos pair excellently with a side of fresh lime wedges and radish slices.
