Hibiki 21 Year

Hibiki 21 Year is a premium blended whisky produced in Japan by Suntory Global Spirits. It is widely considered one of the most honored whiskies in the world, representing the pinnacle of Japanese craftsmanship and the art of blending.

Producer History

The brand is produced by Suntory, a company based in Osaka, Japan. Suntory operates two primary single malt distilleries, Yamazaki and Hakushu, and a grain distillery, Chita. These three facilities provide the foundation for the Hibiki range, allowing master blenders to create complex, harmonious profiles by combining diverse malt and grain components.

Product History

Hibiki was introduced by Suntory in 1989. The 21-year expression is crafted by marrying single malts from the Yamazaki and Hakushu distilleries with grain whisky from the Chita distillery. The spirit is matured for a minimum of 21 years in a combination of American ex-bourbon barrels, European ex-Sherry casks, and rare Japanese Mizunara oak casks. The bottle design features 24 facets, which symbolize the 24 micro-seasons of the traditional Japanese calendar.

Taste Profile

Appearance: A deep, rich amber hue.

Aroma/Nose: The nose is characterized by restraint and elegance, featuring notes of dried stone fruits such as apricot and plum, complemented by candied orange peel and a distinct, resinous sandalwood quality derived from Mizunara oak.

Palate: The texture is notably silky. The palate offers a complex interplay of fruit, spice, and wood, maintaining a delicate balance that is a hallmark of Japanese blending techniques.

Finish: Long, graceful, and tenderly calm, leaving a lingering impression of wood spice and fruit.

Overall Character: It is a sophisticated, nuanced whisky that prioritizes harmony and balance over aggressive peat or heavy sherry influence.

Review

Based on an aggregation of professional and community ratings from sources including Distiller, Enterwine, and the World Whiskies Awards, the Hibiki 21 Year holds an average score of approximately 4.6 out of 5 stars, consistently recognized as a world-class blended whisky.

Serving Guide

Glassware: Tulip-shaped glass | Serving temperature: Room temperature | ABV: 43%

Serving Suggestions

  • Neat, to fully appreciate the complex aromatic profile.
  • With a small amount of water to open up the resinous Mizunara oak notes.
  • Oyuwari, the traditional Japanese practice of adding a small measure of hot water.

Food Pairings

  • Sashimi or high-quality sushi, as the delicate nature of the whisky complements the clean flavors of raw fish.
  • Grilled unagi (eel), where the sweet and savory glaze mirrors the fruit and wood notes of the whisky.
  • Dark chocolate, which highlights the dried fruit and sherry-cask influence in the blend.

Cocktail Recipe

While the Hibiki 21 Year is typically enjoyed neat, it is occasionally used in a premium Highball to showcase its texture.
