Chilli Chocolate Mousse

Ingredients

  • 200g high-quality dark chocolate (70% cocoa)
  • 150ml heavy cream
  • 2 large eggs, separated
  • 1 tbsp granulated sugar
  • 1/2 tsp dried ancho chili powder
  • A pinch of sea salt

Instructions

  1. Melt the dark chocolate in a heatproof bowl set over a pan of simmering water until smooth.
  2. Whisk the egg yolks into the melted chocolate one at a time until fully incorporated.
